Do I have to put wine in this recipe?

I found this recipe online for a dish I loved in restaraunt. I'm pretty sure the dish there did not have wine in it. Do I have to add it and if not what do i do to replace it in the recipe? And what kind of wine should I buy ? It is for Pollo Scaloppine 4ozlemon juice 2oz white wine 4 ozheavy cream 1 lb butter you slowly cook that to make the sauce: 8oz chicken breast 3/4 flour 6oz smoked pancetta 12 oz mushrooms 12 oz artichoke 1 T capers 1 lb pasta.   1. Just use some lemon, the white wine will add a sort of acid taste. Lemon would work with this. Or some white vinegar, but I'd use half of what the wine calls for. For some reason I could taste vinegar in chicken dishes, chicken picks it up and keeps it, lol....
  2. no, you do not have to put it in, you can substitute chicken broth or apple juice in its place...
  3. You don't HAVE to, but the wine imparts a subtle flavor (and the alcohol content burns off)
  4. You can always leave wine out of a recipe. I've actually cooked Pollo Scaloppine (Chicken Scaloppine). My recipes don't include wine and they taste just fine. serves 4 4 boneless, skinless chicken breast halves, trimmed, rinsed and patted dry CRISCO 100% Extra Virgin Olive Oil Cooking Spray Salt and pepper to taste 1/2 teaspoon salt 1 cup dry bread crumbs 1 teaspoon dried oregano 1 teaspoon dried basil 2 eggs, beaten to blend 2 cups purchased pasta sauce 1/2 cup grated Parmesan cheese Fresh basil for garnish (optional) Preheat oven to 350�F. Place chicken between sheets of waxed paper or plastic wrap. Flatten thickness of 1/4 inch using meat mallet or rolling pin. Spray both sides with Crisco 100% Extra Virgin Olive Oil Spray. Season with salt and pepper. Combine breadcrumbs, oregano and basil in shallow bowl. Dip chicken in eggs. Dredge in breadcrumbs. Spray a heavy large skillet with Crisco 100% Extra Virgin Olive Oil Spray and heat over medium-high heat. Add chicken and cook until golden, 1-2 minutes per side. Transfer chicken to a baking sheet. Place in oven and bake about 5 minutes. Meanwhile, heat pasta sauce. Spoon warm sauce over chicken. Sprinkle with Parmesan cheese. Sauté until mushrooms begin to soften (approximately 2 minutes). 2) Add cream and chicken stock. Reduce sauce for an additional 2 minutes. NOTE: Sauce must have a creamy yellow color and be slightly thicker than heavy cream. 3) Add tomatoes and butter. Dredge spinach in sauce. 4) Place heated pasta on upper center of round plate. 5) Remove the spinach with tongs and arrange along bottom edge of plate (4 o'clock to 8 o'clock.) 6) Remove chicken and arrange in a "V" shape (point of "V" at 6 o'clock). 7) Pour sauce over chicken and lower half of pasta.
  5. I saw a recipe recently (i tried to find it and couldn't) and it called for white wine or white grape juice. So I would say use white grape juice.
  6. Just follow the rule 'I LIKE COOKING WITH WINE, SOMETIMES I EVEN PUT IT IN THE FOOD' Have a good meal.
