- take a wheel of brie and scrape off the top with a knife - make a mixture of brown sugar, a little butter, and nuts, either pecans or almonds - and pile it all on top. bake in the oven at around 375 - 400 until the cheese is melted / gooey and the nuts are browned - it's really really good! serve with crackers / apple slices.
- Prosciutto-Date Bundles 20 slices prosciutto 20 blanched almonds 10 baby bocconcini cheeses 7 dried dates 1 tsp olive oil a sprinkle balsamic vinegar (optional) freshly ground pepper 1.Preheat the oven to 350F. 2.To make each bundle, cut each slice of prosciutto into 2 long strips (cut along the width). Cut a baby bocconcini in half and place one half on the end of one of the prosciutto strips. Cut a date into thirds and add a piece on top of the bocconcini. Place an almond on top. 3.Roll up the prosciutto strip around the cheese, date and almond. Then roll the other strip of prosciutto around the other side of the bundle so the fillings are completely wrapped. Insert a toothpick through the bundle to hold it in place. Repeat process and make 20 bundles. 4.Swirl the olive oil in the bottom of an oven proof dish. Add a couple grindings of black pepper to the oil and a few drops of balsamic vinegar, if desired. 5.Place the bundles into the baking dish (You can make these up to this point the day ahead and keep chilled, covered, until baking at the home you are visiting). 6.Bake 25 minutes until the prosciutto begins to turn golden. Serve immediately. Crostini with Gorgonzola and Figs 8x baguette slices, 1/3"-thick 1/3cup crumbled Gorgonzola cheese - (abt 2 oz) room temperature 1tbl butter room temperature 3lrg fresh ripe figs cut into thin wedges 2tsp olive oil (preferably extra-virgin) •Preheat broiler. Arrange baguette slices on baking sheet. Broil until lightly toasted on 1 side. •Mash crumbled Gorgonzola and 1 tablespoon butter in small bowl until smooth. Spread Gorgonzola mixture evenly over untoasted side of baguette slices. Top with figs. Drizzle oil over figs. •Broil until Gorgonzola mixture bubbles around edges, about 3 minutes. Transfer crostini to platter and serve. •This recipe yields 8 servings. •Comments: The sweet figs and tangy Gorgonzola are perfect partners in this unique and delicious take on a popular hors d'oeuvre.
- To the already suggested crackers and cheese, you could always add a bit of foie gras with slices of toast to serve it on if you have a specialty shop nearby. Or if you can get authentic rillettes... my favorite is the pork... that's what they served at the wine store where we attended a tasting here in France. Plus fresh veggie sticks: carrots, celery, cucumber, even bits of broccoli and cauliflower or radishes.
- How about cracked crab "martinis"? Saw this done at a charity gala recently. Fill a well-chilled martini glass with cracked crab, top with one perfect crab claw standing upright and draped over one side, drizzle with a little bit of mild salsa (don't drown it!) and some fresh lemon juice. Top with a wedge of lemon and garnish with a stir stick with two olives. Enjoy!

- Nice recipe ideas, However to give a proper response I need to know what wines you are serving or what food you are serving. Paring the wine to the food is the most important part. I like to go for regional pairings a flight of Chiantis with an assortment of fried raviolis perhaps or some Burgundies with some french provincial cheeses?
- Crab dip 1 6 oz can of crab - drain and make sure there is no shell 1 8 ox pkg softened (room temp) cream cheese 1 1/2 Tbs prepared horseraddish 1 dash Worcestershire Mix together and let sit for several hours. It is so easy to make and taste fab! Serve with crackers
- i agree something perhaps with a dip is always good crab and crackers
