White Wine + Mushroom sauce - No creme fraiche...substitutes?
What can i use (if anything) in exchange of creme fraiche in a white wine and mushroom sauce? Or will i have to make a quick dash to the shops?

- Sour cream or plain yogurt, but make sure you temper them or they will curdle (tempering is just adding some of the hot liquid to the creme, sour cream or yogurt to warm it gently before adding it to the hot dish). I actually prefer the plain yogurt, but I have used both before.
- Make a basic cream sauce using flour or corn starch, milk, butter (or margarine), salt, pepper, paprika, and a dash of garlic powder.
- Sour cream or plain yogurt should work.
- Plain yogurt if tempered should work just as well as Creme Fraiche. A bit of Mascarpone Cheese might work as well too but that I have not tried yet so.......who knows
- You could reduce the white wine, concentrating the flavors and just finish the sauce with some butter.
