Any recipes for mussels, white wine & cream sauce? I had mussels in white wine, French herbs & cream broth at a restaurant. I'd like to try it at home, but I'm worried about the wine curdling the cream -- I'm not sure which order to add the ingredients in, or for how long, to prevent the wine curdling the cream. Thanks in advance for any help! Sorry, forgot to say that I want to steam the mussels in a big pot on the stove ... I'm assuming I need a certain amount of water (I can't just steam them in the wine alone, can I? Won't it evaporate?), salt, herbs, etc ... I have no idea about proportions and quantities. If I make the sauce to pour *over* the mussels, then what do I use to steam them with?

My concern is rice milk or soy milk might not give the same consistency as the heavy cream. How do I make a white wine and cream sauce without the cream churning? I heard that as long as one of those two ingredient is of opposinte temperature from the other, then it will effectively prevent the churning of a dairy product when in contact with an acidic (in this case the white wine) ingredient. However, when I tried this approche, I ended up with alot of clumps in my sauce. Please help!!

Smoked Salmon Fussli Pasta, how do you make the smoked salmon cream sauce?? I had this dish at an italian restaurant and have attempted to make it but I can't get the sauce right. The dish is very simple, just fussli pasta with the smoked salmon cream sauce mixed in to the pasta. The sauce tastes very creamy, smooth and smokey. From what I can see the sauce has in it; cream (milk or sour cream??) basil smoke salmon pieces olive oil and maybe white wine?? but it didn't say that in the menu. I tried with these ingredients but the sauce came out to thick... the colour was more a light cream/pinky colour rather then the rich orange colour of the restaurant dish. Plus the next day when i tried the left overs the pasta had soaked up the sauce and the pasta dish was very dry. When i bring take home of that restaurant dish the sauce still stays pretty saucey when i re-heat it the next day. What am I doing wrong??

How do Chefs invent/make dishes? More so how do chefs know when to pair a sauce when a course? I've walked into many restaurants and had the pleasure of enjoying AMAZINGLY delicious food. I wonder HOW DO CHEFS KNOW WHICH SAUCES TO USE FOR DISHES LIKE FOR beef or pork or veggies. I know, yes, you have to go to culinary school for that but can anyone tell me or recommend what sauces go with what or what fruits go best with what food. It can be for deserts, main dishes or side dishes (ie: red wines with dark meats, white wine with light meat, cream sauces with red meats). I once had a garlic mousse souffle that was CRAZY good! I tasted the garlic BUT it was sweet and creamly with a caramel sauce.

How come everytime we make cream sauce, especially with pasta, the cream curdles? My boyfriend and I have made a couple different attempts at pasta with cream sauce, once with a white wine reduction and one carbonera sauce. We followed instructions, but both times, the cream curdled. (in the case of the cabonera, teh egg sauce curdled). What are we doing wrong? Is there too much grease and oil? I thought that was PART of the reduction/ pan sauce part? We cooked down the onions and white wine first, then added the cream before adding the pasta? Ok, the burner was turned off after pretty thouroughly reducing the wine, so I don't really think heat is it. Maybe it needed flour first, though?

Question about baked chicken w/ condensed cream of chicken soup? I am making a baked chicken dish which I have put together and have ready in the fridge to bake. It is chicken breasts topped with swiss cheese, then a sauce made of cream of chicken soup, sour cream, white wine, pepper, garlic powder, a touch of dijon mustard. Right before I bake it I'm topping it with crushed croutons and drizzled butter. My questions are: 1) I do not like how the sauce is smelling, it smells like canned chicken soup which I'm not crazy for.
